White would reply Bb5+ then after Qd7, Nxd7 when white is a piece ahead
Because that seems to lose material by Bb5+, Qd7, Bd7 Kd8, followed by Nf7+ Nh8 or something.
basically white can check the black king with the bishop which ultimately leads to, I believe, an extra piece for white.
with the black bishop out of the way (after capturing white's queen),
black can no longer defend the stuck king with anything other than the queen. and since that square (d7) is defended by white's knight after Nxe5, black can't capture the piece back.
This is a roundabout way of saying black's pieces become displaced and white gains a (probably) winning advantage due to some clever tactics.
