It would be an interesting feature to be able to change what shows for quick pairings. I'd like to ban myself from playing bullet games, and if I could simply deselect them from appearing in my lobby under some kind of account setting, that'd be pretty cool. I'm not saying allow the user to create their own default quick pairings, but simply hide the ones that Lichess offers that I'm not interested in playing via a setting.
Till this feature is added, you could go to lobby, click on settings, and deselect all pairings you dont want, and then play from the lobby only.
